Orzo Pasta Salad
*2 Cups Orzo Pasta
*1 Seeded/diced Tomatoes
*1 Seeded/diced Cucumbers
*1/2 cup feta cheese
*1/2 cup Olive Oil
*1/8 cup Lemon Juice
*1/2 tsp Italian seasoning
*1/8 tsp garlic powder
*Salt and pepper to taste
1- Cook orzo according to package directions
2-While orzo is cooking seed and dice tomato and cucumber and set aside
3- In the serving bowl whisk together the dressing ingredients until they are mixed well and set aside
4-When orzo is done cooking, drain and run it under cold water to stop the cooking process.
5-Add orzo, veggies, and feta cheese to the serving bowl with the dressing and mix well.
Salt and pepper to taste and chill in the refrigerator for at least an hour or until ready to serve.
The longer it sits, the better it will taste
It is very important to remove the seeds from the veggies so the salad doesn't get soggy.
